
I started making banana muffins after moving out of my family's home as a young adult. Every batch I make is different; I don't really follow a recipe, but this is the outline in my head that guides me.
Banana Muffins
Ingredients
- 1 stick of butter
- some sugar (1/8 cup?)
- some molasses (1/4 cup?)
- 4-5 ripe bananas
- 1 egg
- 2 cups flour
- 1 tsp baking soda
- 1 tsp salt
- spices (cinnamon, cardamom, allspice, nutmeg, clove, ginger, etc.)
Instructions
- Preheat oven to 375F
- Mix some sugar into a soft stick of butter
- Add molasses, bananas, and then the egg
- Mix in flour, baking soda, salt, and spices
- Bake for 15-20 minutes
- Make carrot-ginger muffins by replacing the bananas with about three grated carrots and a grated root of ginger (100g?), start with 1 1/2 cups flour, might be all you need
- Make zucchini muffins by replacing the bananas with about three grated zucchini (let them dry out on a cookie sheet awhile first), also may only need 1 1/2 cups flour
- Experiment with cacoa and fruit zest!
